From Farm to Table | Made in Detroit
Michigan grows a lot of delicious food. Not just fruit and vegetables - but also excellent pasture raised pork. Detroit is a city of innovators - we’re leaders of industry. When we want something done, we do it ourselves. We cure our pork with as much care and passion as the farmer that raised it. It takes hard work to chart a new path - It’s a journey Gratiot Avenue Provisions is proud to share with you: from farm, to drying cellar, to table.
Located in Detroit’s historic Eastern Market, Gratiot Avenue Provisions is the leader in Michigan made charcuterie. Opened in 2018, our production facility uses the latest technology and manufacturing practices to dry and cure our meats in a clean and safe environment. Gratiot Avenue Provisions is proud to source all of its heritage-breed pork from Michigan farmers.
Chef Aramis Jones possesses unparalleled experience crafting cured meats and charcuterie for Detroit’s dining scene. His recipes and methods draw from centuries old European charcuterie and sausage making traditions. The time and care that goes into this process results in a product with exquisite flavor
Opening Fall 2018, our flagship restaurant will reside at 1528 Gratiot Avenue, a historic building that previously housed a butcher supply store and the Detroit Candy Company. The menu utilizes whole-animal butchery and highlights our extensive charcuterie offerings.
